ROANOKE – Phyllo Wrapped Banana with Salted Caramel and Vanilla Ice Cream

Ingredients
Bananas
- 4 ea. Bananas 2 tbsp. Melted Butter
- 4 Sheets Phyllo Pastry Dough 1 ea. Egg
- 2 tbsp. Melted Butter
- 1 ea. Egg
Salted Caramel
- 1 cup Granulated Sugar ½ cup Heavy Cream
- 2 tbsp. Softened Butter 1 tsp. Salt
- ¼ cup water
- ½ cup Heavy Cream
- 1 tsp. Salt
1 tsp. Ground Cinnamon
1 tbsp. Powdered Sugar
1 ½ cup Vanilla Ice Cream
Method
Bananas
1. Preheat Oven to 400 Degrees.
2. Brush Phyllo with butter, cut into 4 equal sizes and layer. Place banana in center and wrap. Rest on seam and brush with egg.
3. Place wrapped bananas on parchment lined sheet pan and bake until golden brown.
Salted Caramel
1. Melt sugar with water on medium high heat for about 10 minutes until amber.
2. Add cream and whisk in butter.
3. Add Salt.
Presentation
1. Cut bananas in half on a bias, arrange on plate, scoop ice cream.
2. Drizzle warm caramel and dust with cinnamon and powdered Sugar.
