Whenever we have a cook out Matt ends up standing over a hot grill for 1-2 hours… while I know he likes to do the grilling… but it has been just too hot lately.. So this past weekend I made Chicken BBQ in a crock pot and baked beans in another crock pot… usually my slow cookers get very little use in the summer but it worked out great in that we had cookout food without the added heat and it was so easy!
For a group of about 10 people… I put 4-5 lbs of chicken breasts in the crock pot with a bottle of our favorite sauce… we like John Boy and Billy’s sauce… I add a little teriyaki sauce, minced garlic, a honey and a dash of hot sauce to it… dump the sauce on top of the chicken and then cut up a vidalia onion and throw that on top… let it cook for 7-9 hours on low…(I cooked it overnight).. it goes through a stage that looks “soupy” but after another hour or so it looks just like shredded barbecue when you stir it… I did make homemade cole slaw which was the most time consuming item because I only have a small food processor and used it little by little to chop up a whole head of cabbage.. that recipe is even less scientific… mayo, vinegar, sugar, salt and pepper to taste… the chicken barbecue was a hit and easy to boot… Here’s to crock pot cook outs… every now and then…
