Food Lion Kitchen: Amazing Pimiento Fritters

Pimiento Fritters

• 1 cup cottege cheese
• 1 cup shredded cheddar
• ½ cup pimientos diced drained
• 1 tsp salt
• 1 tsp pepper
• 1 tbs Cajun seasoning
• 1 tbs smoked paprika
• 1 cup bread crumbs
Mix all in a bowl and refrigerate
Form the pimiento cheese into round balls slightly smaller than golf balls

For breading
Roll balls in:
• ½ cup flour mixed with water until cream consistency


Then in:
• 2 cups bread crumbs sprinkled out over a pan
Deep Fry at 350 for 3 minutes until golden brown serve immediatly
or  Bake at 400 for 6 minutes convection
