
Healthy, Easy, AND Delicious Greek chicken salad:
Ingredients:
1 cup cherry tomatoes cut in 4's.
1 cup diced cucumber
½ cup Kalamata olives halved
½ cup chopped pepperoncini
¼ cup diced red onion
½ - ¾ cup parmesan in food processor
1 T. sherry vinegar
½ cup red wine vinegar
1 cup olive oil
1 cup canola or grape seed oil
1 T. dried oregano
Procedure: Combine all ingredients and stir! … THAT'S IT! (for best flavor, serve the following day)
Serve with grilled chicken or fish over a bed of crunchy romaine hearts. Garnish with a little sprinkle of feta cheese. Or even add cooked pasta for bright and easy pasta salad.
