
Yellow Corn Blueberry Pancakes with Orange Honey Butter and Blueberry Compote
Pancakes
3 Cups Flower
1 Cup Yellow Corn Meal
3/4 Cup Sugar
Pinch of Baking Soda
1 tsp Salt
4 My Essentials Eggs
4 Cups Buttermilk
1/2 Cup Melted My Essentials Butter
2 tbsp Vanilla Extract
4 Egg Whites (whipped to soft peaks)
2 Cups Blueberries
In a mixing bowl, add oil to wet ingredients minus the whipped egg whites.
Add the dry ingredients to the wet ingredients and lightly mix together.
Fold in egg whites
Grease a griddle pan with butter
Cook 3 min. each side on medium heat.
Orange-Honey Butter
1 Stick Unsalted Butter
2 tbsp Orange Marmalade
2 tbsp Honey
1 tsp Sea Salt
Leave butter out at room temp. until soft. Add remaining ingredients and mix together.
Pour into a parchment lined mold to refrigerate for an hour.
Blueberry Compote
2 Cups Blueberries
2 1/2 Cups Sugar
2/3 Cup Berry Liquor
1 Cinnamon Stick
1 Vanilla Bean
Combine all ingredients in a pot to cook over low heat for 20 minutes.
