
Egg Casserole

5 eggs
½ teaspoon baking powder
1 cup cottage cheese
4 ounce can green chilies (whole)*
¼ cup butter (melted)
¼ cup flour
¼ teaspoon salt
Pinch of black pepper
1 cup grated Monterey Jack cheese
Pre-heat oven to 350° F. Beat eggs in mixing bowl; add flour, baking powder, salt and pepper, mix well. Add other ingredients and mix well. Pour into well-greased 9"x9" baking dish. Bake at 350° F for 45 minutes. Serves 6. This recipe can be made the night before and refrigerated. You can also double it in a 9" x 13" baking dish.
Serve with fresh fruit and/or hash browns and toast. Makes a great breakfast, brunch or dinner dish.
*I use whole green chiles but you can also use the chopped ones.
