Food Lion Kitchen: Moqueca Mineira

Moqueca Mineira

Baiano Sauce

2 Tbsp butter

2 Tbsp flour

2 Tbsp palm oil

pinch of chilly pepper

pinch of salt

2 Tbsp red pimientos

2 Tbsp chopped onions

2 Tbsp chopped scallions

1 cup tomato sauce

 

Seafood

2 to 3 pieces of fillet of cod or any white fish

6 shrimp

6 clams

Melt butter and add flour, cook over medium heat by always mixing

Add palm oil and water

Simmer for 15 mins

Add the rest of the ingredients

Bring to a boil

Then add all the seafood

Cover until the clams are open and all the seafood is cooked for 15 mins

Serve over bed of rice
