
Marinated Broiled Tomato Panini
with Asiago and Arugula
For the marinade:
1 C olive oil
1/3 cup balsamic vinegar
1/2 tsp salt
1/2 tsp pepper
1 clove garlic, Crushed
1 half white onion, diced
4 leaves basil, finely chopped
1 tsp dried oregano
3 large tomatoes, sliced thick
Preferred bread of choice ( I will be using sourdough from On the Rise Bakery)
Basil pesto mayonnaise:
3 tsp Basil pesto sauce
2 C mayonnaise
Shredded Asiago Cheese (or Parmesan if unable to find Asiago)
Arugula
Combine the marinade ingredients and add to the sliced tomatoes. Let this marinade for at least an hour. Brush your bread on both sides with olive oil and grill lightly.
Combine the pesto sauce with the mayonnaise and mix well. Spread on the grilled bread, then add 2 or 3 slices of tomato. Top with the asiago and melt the cheese under a broiler. Add the arugula and top with the other slice of bread, then press the sandwich on the grill until warmed through.
Recipe makes about 2.5 cups of marinade and 2 cups of mayo.
