Food Lion Kitchen: Lamb and Grits!

Braised Border Springs Farm Lamb Shank

Served with Creamy Virginia Byrd Mill Stone Ground Grits


4 Lamb Shanks

3 Medium Carrots

3 Stalks Celery

2 Medium Onions (small dice)

2 Sprigs Fresh Thyme

2 Cloves Garlic

1 Cup Port Wine

4 Cups Lamb or Beef Stock

1/4 Olive Oil


Salt & Pepper to taste


In Dutch Oven season the Lamb Shanks with Salt & Pepper and sear in Olive Oil.  Remove Shanks and set aside.  Add all vegetables and herbs.  Let brown.  Add back the Shanks.  Add Port Wine and cook for 5 minutes on medium heat.  Add stock and set to simmer.  Cook for 2 1/2 hours making sure to always have liquid.  Add additional stock if needed.
