2 Granny Smith Apples, cored and chopped
½ large English Cucumber, peeled deseeded and chopped
½ each Red and Yellow Bell Pepper, fine diced
3 tablespoons Red Onion, fine diced
1 tablespoons fresh Mint, chopped
1 tablespoon fresh Cilantro, chopped
1 Jalapeño Pepper, seeded and very fine minced
1 tablespoon light brown sugar
¼ cup fresh lime juice
2 tablespoons rice vinegar
1 tablespoon olive oil
Salt and Pepper to taste.
Mix all ingredients and chill.
