Food Lion Kitchen: Glazed Black Cod

White Soy and Ginger Glazed Black Cod with Chef Tom Triantafilles from Metro! Restaurant & Lounge

4 8oz Skin-on Fillets of black cod, pin bones removed
1 tbs clarified butter
1 non stick pan

1 cup white soy (sub white miso paste if not available cut miso paste by half and add half water)
1/2 cup chopped fresh ginger
1 cup sake rice wine
1/2 cup chopped green onion

Add all ingredients to a blender and blend until smooth
Sear fish skin side down in clarified butter on medium high heat
Flip after skin starts to brown
Add glaze to pan and ladle over fish as it starts to thicken
When fish is opaque, remove to a serving dish
Let sauce thicken to glaze consistency
***Tip: If it gets too thick add a little water!
