1 Egg Yolk
1 Cup Sugar
2/3 Cup Heavy Cream
Grated Rind and Juice of 2 Lemons
Whisk the whole eggs, egg yolk and sugar together until smooth. Add the cream and whisk again, then stir in lemon rind and juice. Pour the filling into the shell of your choice and bake for 40 minutes at 350, or until just set.
