Food Lion Kitchen: Champagne Vinaigrette

Champagne Vinaigrette - Chef Aaron Deal, The River and Rail
 
2 oz Shallot, chopped
3 ea Garlic Cloves, Cored and Sliced
2 T Whole Grain Mustard
1 T Honey
1/4 C Champagne Vinegar
1.5 C Canola Oil
Salt and Pepper To Taste

Combine all ingredients except for oil in blender or food processor.  Process until pureed.  Once puree consistency slowly drizzle all of the canola oil into mixture forming an emulsion. Season and store refrigerated.
