Food Lion Kitchen: Chicken Tuscan Flatbread

Tuscan Chicken Flatbread from Chef Justin Hitt at 202 Market

1 chicken breast, boneless, skinless
2 pita flatbreads
2 oz basil pesto
2 red bell peppers, roasted, peeled, seeded, and diced
salt and pepper for seasoning
2 tsp Parmesan cheese, grated
1/2 c arugula

Grill the chicken until cooked. rest the meat for 3 minutes and then slice thinly. Grill the flatbread and then coat with the pesto sauce thoroughly. Char the peppers over an open flame or grill until the skin darkens and becomes slightly papery. Place in a bowl and cover with plastic wrap. Let this sit 3 minutes, same as the chicken. Once the peppers have sat and the skin is loose, remove it and seed , then dice the peppers. Sprinkle these generously over the flatbread. Top with the arugula and Parmesan and broil until the cheese melts slightly. season with salt and pepper. Enjoy!
