Our Chef Challenge week continues with Chef Aaron Deal.  Today he is making a Roasted Heritage Chicken, NC Clams, Carolina Rice Grits with a Toasted Peanut Broth

4 ea - Chicken Breasts, Bnls, Skin On

2 ea - Chicken Sausage

As Needed - Kosher Salt, Black Pepper & Canola Oil

 

20 ea - Little Neck Clams, Scrubbed & Soaked

 

1 C - Carolina Rice Grits

1.5 C - Whole Milk

1.5 C - Vegetable Stock

1 ea - Bay Leaf

4 oz - Chicken Livers, Cleaned

2 oz - Yellow Onion, Small Dice

3 ea - Garlic Cloves, Minced

1 ea - Red Pepper, Small Dice

1 T - Fresh Thyme, Picked

 

3 C - Apple Juice

1 t - Fish Sauce

1 T - Rice Wine Vinegar

½ C - Honey Roasted Peanuts

¼ C - Dr. Perky Soda

2 ea - Garlic Cloves, Smashed

1 T - Sambal Chile Paste

1 T - Raisins

1 Pinch - Saffron Threads

 

½ C - Honey Roasted Peanuts, Chopped

¼ C - Chives, Sliced
