Food Lion Kitchen: Yellow Squash & Red Pepper Soup

2 yellow squash, cored and chopped
1 Large red bell pepper, stem and seeds removed, chopped
1/2 Onion, chopped
2 C. low sodium chicken stock.
2 cloves of garlic, chopped
4 sprigs of thyme
1 package Boursin brand cheese
2 Tsp. ground coriander
2 Tsp. butter
Salt and pepper to taste

Melt the butter in a saucepan and add your onions. Saute until slightly caramelized and light brown. Add the peppers and squash. Saute for another 4-5 minutes until the peppers are tender. Add the garlic and stock, as well as the thyme. Allow this mixture to simmer for about 13-15 minutes until the vegetables are soft and the liquid is reduced slightly. Add the coriander, salt and pepper to taste. Remove the thyme stems and transfer the mix to a blender and puree until smooth. Pour into bowls and finish with a Tsp. of the cheese. Serves 6 large bowls.
