1 cup flour
1 cup Italian bread crumbs
1-2 slices provolone cheese
3 tablespoons favorite marinara sauce
Pre-heat oven 400 degrees. Slice your eggplant thin. Using a simple breaking station, place your eggplant in flour, egg wash, and bread crumbs. Refrigerate the eggplant at least 10 minutes so the breaking really adheres to the eggplant. In medium heat pan, using a small amount of oil, pan-fry the eggplant until golden brown on both sides. If necessary, finish the cooking of the eggplant in the oven.
