Simple Chicken & Veggies - Roy Jackson, 1 More Set

1 Tbsp Paprika
1 Tbsp Garlic Powder
1 Tbsp Onion Powder
1 Tbsp Curry Powder
1 Tbsp All Spice
1 Tbsp Cayenne Pepper
Salt & Pepper to taste
1 Tbsp Olive Oil
1 Tbsp Butter
3 Cloves Garlic
4 Chicken Breasts
1 Summer Squash
1 Zucchini Squash

Mix together paprika, garlic powder, onion powder, curry powder, all spice, cayenne pepper and combine well.
Rub mixture onto raw chicken; place in plastic bag and refrigerate overnight or at least six hours.
Heat oil in large pan; cook chicken for 7-8 minutes on each side, or until browned; place in oven at 350 degrees for about 20 minutes, or until cooked through.
Meantime, slice zucchini and summer squash; soak in cold water and salt for 20 minutes.
Slice garlic and heat with butter in pan; add veggies and saute.
Serve with sliced chicken.

Special Sauce

2 Cups Catsup
8 Oz Water
2 Tbsp Red Wine Vinegar
1 Tbsp Lemon Juice
2 Tbsp Worcestershire Sauce
1 Tbsp Honey
2 Tbsp Mustard
2 Tbsp Apple Cider Vinegar
3 Tbsp of Dry Rub Mixture (from above)
1/2 Tbsp Dry Mustard Powder
2 Tbsp Brown Sugar
2 Tbsp Sugar

Combine all ingredients in saucepan, bring to a boil, let simmer one hour.
