Phil Fills In: Bagel baker at NYBD Bagel III in Cary

Phil has "filled in" doing all sorts of different jobs throughout the Triangle this year. He's filled in at a coffee shop as well as a biscuit and doughnut shop, but he's yet to fill in at a bagel shop. Until now.

Phil says he's a bit of a "bagel snob," so baking bagels is right up his alley. In this week's edition of "Phil Fills In," Phil goes to NYBD Bagel III in Cary to spend the morning with owner Tommy Nurrito. 

"We make everything from scratch with the best ingredients, we're not a franchise," Nurrito says. "I'm a bagel master."

Phil, on the other hand, was anything but a master.

Being a television news morning anchor requires early mornings, but so does running a bagel business. As Phil found out, bagels are just about a 24 hour per day, 7 day a week job.

Bagel dough is prepared each day, for the next morning. That's where Phil started out. 

"We just take pride in everything we do, we make stuff fresh everyday, nothing is frozen," Nurrito says.

Waiting for the dough to rise, Phil helped out behind the counter too, even serving a customer a bagel with cream cheese.

Once the dough is ready, it's then put through a bagel cutting machine. More than 300 bagels are prepared by hand daily.

It's an exact science performed one at a time.

Phil may not have known much about being a bagel baker when he started his day, but he learned a lot.  

"We could probably hire him part time," one employee joked.
