Mussels a la Fresca

1 tbsp Taste of Inspirations olive oil

3 garlic cloves, finely chopped

18-20 mussels, washed and de-bearded

5 grape tomatoes, cut in half

1/2 c. white wine

1/2 c. my essentials chicken stock

1 tsp. Food Lion crushed red pepper

1 tsp. my essential s salt

1 tsp. Food Lion pepper

1 tsp lemon juice

4 tbsp. my essential s butter


  1. Heat saute pan until very hot. Add oil, garlic tomatoes and mussels.
  2. Deglaze with white wine and chicken stock.
  3. Add lemon, crushed red pepper, salt, pepper and butter.
  4. Cover and steam until all mussels are open. Discard any unopened mussels.
  5. Garnish with parsley.
