Chocolate Covered Candied Bacon
Makes 1 pound
1 pound Taste of Inspiration thick sliced bacon
3/4 cup My Essentials light brown sugar
Cayenne pepper, if desired
1 cup dark chocolate chips
Preheat oven to 350. Place a layer of aluminum foil on a cookie sheet. Set aside.
Cut bacon into desired lengths.
In a shallow bowl, mix brown sugar and cayenne. Dip bacon into sugar mixture, coating well on both sides. Place bacon on prepared cookie sheet and sprinkle with more sugar.
Bake at 350 until crisp, about 25-30 minutes. Allow to cool.
Once cooled, melt chocolate chips in the microwave at 30 second increments, stirring after each, until chocolate is smooth. Dip candied bacon in chocolate and place in parchment paper to dry.
Store in airtight container.
