Food Lion Kitchen: PetEx: Paw Paw's Pupcakes

Paw Paw's Pupcakes - Debbie Fail & Ginger Booze
 
2 cups My Essentials whole wheat flour
2 teaspoons Food Lion baking powder
1/2 cup honey
1/3 cup My Essentials peanut butter
1 large egg
1/3 cup shredded carrot
1/2 cup diced apples
1 cup My Essentials skim milk
 
Preheat oven to 350 degrees.  Grease muffin pans with nonstick vegetable spray.
 
Stir together the flour and baking powder in a bowl and set aside.  In a large bowl, cream together the honey and peanut butter with an electric mixer or wooden spoon.  Beat in the egg and milk, add carrots and apples and mix until smooth.
 
Pour the batter into the muffin pans.  Bake for 25 to 35 minutes, or until a toothpick inserted in the center of the cakes comes out clean.
 
Cool to room temperature before icing and serving.
 
Store in an airtight container for up to 3 days or wrap well and freeze for up to 2 months. (Thaw before serving.)
 
Icing:
8 ounces cream cheese (low or fat free)
2 Tbsp honey
2 Tbsp plain yogurt (low or fat free)
flour (see note)
Note:  Approximately 3 Tbsp white flour.
 
Mix first three ingredients in a bowl until smooth.
Mix in one tablespoon of flour at a time until you have a good consistency for spreading.
