Frankie Rowland's Kitchen: Pomegranate Salad

Pomegranate Salad (or Blood Orange)  with Shaved Fennel, Preserved Lemon with a Mint Vinaigrette.

.5 pomegranate pods removed (or blood oranges)

3 C Salad mix

1 tsp preserved lemon, just the rind diced

.5 fennel bulb sliced as thin as possible

2 oz. thinly sliced onion

4 oz. Mint Vinaigrette

Mint Vinaigrette

4 oz. fresh mint

1 C White Balsamic Vinegar

1 C Vegetable Oil

TT Salt and Pepper

2 T honey

MOP: Add all of the ingredients to the blender except the oil and blend until smooth. While the blender is running slowly stream the oil. Check for seasoning.
