Daytime Kitchen: Crab and Dandelion Hush Puppies

Crab and Dandelion Hush puppies with a malt vinegar mayonnaise

2 eggs beaten

½ C sugar

1 T Kosher Salt

1 C Cornmeal

¾ C AP Flour

1 T Baking powder

4 oz. Dandelion greens, blanched and shocked

4-8 oz. Crab meat (special, lump, or bakfin)

MOP: Whisk together whisk the eggs, sugar, and salt. In a separate bowl whisk together the cornmeal, the flour and baking powder. Add wet ingredients to the dry ingredients. Once incorporated fold in the crab and dandelion. Fry in batches either in a dutch oven at 350F or a deep fryer.
