Iceberg Wedge with Buttermilk Dressing
1 head iceberg lettuce, quartered

1 batch Buttermilk Dressing
1 pint grape tomatoes, halved
1 c cooked bacon, chopped
Crumbled Bleu Cheese
Steak or Chicken
MOP: Remove the core and outer leaves of the lettuce. Slightly separate the lettuce leaves and place on plate. Drizzle with desired amount of Buttermilk Dressing. Add desired amount of grape tomatoes, bacon and bleu cheese to salad. To make into a meal add cooked steak or chicken.
Buttermilk Dressing
2 T shallot, very fine dice
2 T basil, chopped
2 T chives, chopped
1 T parsley, chopped
2 cloves garlic, minced
juice of ½ a lemon
½ c Duke's Mayonnaise
2 T sour cream
1 c buttermilk
TT salt and pepper
1 T honey
pinch smoked paprika
pinch crushed red pepper flakes
MOP: Mix all ingredients together. Make at least 1 hour ahead of time to let the flavors
