Grilled corn on the Cobb with cilantro pesto

6 ears of corn, blanched and shocked

1/2 # butter softened

1 bunch of cilantro

1 T garlic, minced

1 pinch coriander

2 oz. lime juice

2 oz. EVO

TT salt and pepper

MOP: combine ingredients except EVO for the pesto in a food processor and pulse until combined while streaming the oil. Add pesto to softened butter and mix. Spread on corn and grill.
