We are in the Daytime Kitchen with Executive Chef Consuelo Price from the Oak Tree Tavern at the Virginia International Raceway. Chef Consuelo is making red snapper with blueberry mango chutney and orzo.
Recipe for Blueberry Mango Chutney:
|1 ½ Cup|
Green Onions diced
Fresh Red Snapper
Red Snapper-Pan sear the snapper on both sides with a little blackened seasoning until done.
Vegetable Orzo-Prepare orzo as directed on box. Season vegetables with desired seasoning and roast until tender. Add cooked vegetables to drained orzo and season to taste.
Blueberry Mango Chutney-Mix together blueberries, mango marmalade, red pepper, green
Onions, siracha sauce and honey. Should taste sweet and spicy.
Place chutney over red snapper.
