Roasted Peach Salad with Lemon-Thyme Vinaigrette

ROANOKE – Chef Ted is back from 419 West to show us a delicious Salad that you can whip up for lunch or dinner.


Olive oil Roasted Peach salad with a lemon thyme vinaigrette 

Lemon thyme vinaigrette 

1/2 C Vegetable Oil

1/2 C Lemon juice

1 tsp fresh thyme

1 tsp sugar

1 tsp Dijon mustard 

1 T honey

TT salt and pepper

Zest from 1 lemon

 

Instructions:

Combine everything but oil. While whisking or blending stream the oil in to emulsify. Season with salt and pepper
