Daytime Kitchen: Sea Bass with Corn Puree

ROANOKE – Charlie Brown is back from Frankie Rowland's with another delicious recipe for Sea Bass. 

Corn purée
1 Tbl butter
1 tsp chopped garlic
1 tsp chopped shallot
1 cup roasted corn
1.5 cup heavy cream
In pan, sautée corn, garlic, and shallots in the butter until aromatic. Add heavy cream and reduce by 1/3. Pulse in food blender.

Strain, or eat as is. 

Corn mint relish
1 cup corn
1 Tbl chopped garlic
1 tsp chopped shallot
1 Tbl diced bell pepper (any color will do)
1 Tbl diced pickled jalapeño (fresh works too)
1 Tbl diced fresh mint
1 tsp sugar
2 tsp Apple cider vinegar
S+P to taste
In bowl mix all ingredients.

Ready to serve
