Daytime Kitchen: Grilled Shortcake, Berries, Whipped Cream

Macerated Berries over Grilled Shortcake with a lemon whip cream.

Shortcake
2 Cups all purpose flour
1 Cup white sugar
4 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon nutmeg
1/2 Cup butter
1 Egg
1/3 Cup milk

Preheat oven to 450 degrees F. Sift all dry ingredients together in a large bowl. Cut in softened butter until it becomes crumbly and coarse. Beat egg and milk together in a separate bowl then add to flour mixture. Pour batter into 8 inch, greased pan.Bake for 15 minutes or until golden brown and allow to cool before removing it from the pan.

Macerated Berries
1/4 Cup fresh blueberries
1/4 Cup fresh raspberries
1/4 Cup Chopped strawberries
1/4 Cup white sugar

Mix all ingredients together and let marinate until needed.

Lemon Whip Cream
1 Cup chilled heavy whipping cream
2 Tablespoons sugar
1 Tablespoon finely grated lemon peel
2 teaspoons fresh lemon juice

In a chilled mixing bowl combine all ingredients using an electric mixer until soft peaks form. Hold in refrigerator until needed.
