Lemon Blueberry Layered Dessert
15 lemon cookies, coarsely crushed (about 2 cups) 1 (21-ounce) can blueberry pie filling 1 (8-ounce) container frozen whipped topping, thawed 1 (14-ounce) can sweetened condensed milk 1 (6-ounce) can frozen lemonade concentrate, thawed
How to Make It
Sprinkle 1 tablespoon crushed cookies into each of 8 (8-ounce) parfait glasses. Spoon 1 1/2 tablespoons pie filling over cookies in each glass.
Spoon whipped topping into a bowl; fold in condensed milk and lemonade concentrate. Spoon 2 tablespoons whipped topping mixture over pie filling in each glass. Repeat layers once. Top evenly with remaining crushed cookies. Cover and chill 4 hours.
Note: For testing purposes only, we used Pepperidge Farm Lemon-Nut Homestyle Cookies.
NO BAKE Thin Mint Truffles -
1 Package THIN MINTS!!!
1/2 Brick of Cream Cheese
1 Package Almond Bark (seperated)
Mint Green Food Coloring (I used Wilton coloring gel from Michael's Craft store)
HOW TO MAKE:
In a food processor, CRUSH the cookies
Add the cream cheese and pulse until the cookies have mixed with the cheese and becomes moist.
Take a tsp scoop and your hands and form into balls.
Melt the Almond Bark a cording to directions.
reserve 1/4 cup of the melted bark to use as garnish.
Color the remaining bark with the mint green coloring.
With the balls on a skewer, dip into the colored bark. Drop them on a sheet of parchment paper.
When they have cooled and hardened, remelt the white reserved bark.
Using a fork, dip and drizzle. Be as neat as you like, I like the individual rustic look, but you can also do stripes with a decorating bag and small tip.
Allow the drizzle to cool and harden and ENJOY!
1 package Thanks-a-Lots
1 bag of large marshmallows
· Roast marshmallow in your chosen fashion
· Place between two Thanks-a-Lots, removing roasting stick
· Eat it!
Deliteful Dip (made with Caramel DeLites)
8oz cream cheese (softened)
½ cup brown sugar
¼ cup white sugar
1 tsp vanilla
1 package Caramel DeLites, crushed
Fruits, pretzels, cookies etc. for dipping.
