Daytime Kitchen: Crabbyless Crab Cakes, Cauliflower Buffalo Wings

Crabbyless Crab Cakes w/ Dairy Free Remoulade
2 tsp Toasted Nori Flakes (Sushi Paper)
28 oz. Hearts of Palm (drained and pulsed to resemble crabmeat)
¼ cup Canola Oil 
1 cup Small Diced Onion 
1 tsp Chopped Fresh Garlic 
1 cup Small Diced Red Bell Peppers
1 Cup Vegan Mayonnaise
¼ Cup Nutritional Yeast 
3 Cups Breadcrumbs 
1 tsp Salt
1 tsp Pepper
2 TBL Old Bay Seasoning
2 TBL Vegan Worcestershire 
½ TBL Tabasco 
Method: Sauté onions, bell peppers, and garlic with half the oil. Saute for 2-3 minutes. In a bowl blend the onion, bell pepper mixture with nori flakes, hearts of palm, other half of the oil, vegan mayo, nutritional yeast, 2 cups of the breadcrumbs, salt, pepper, old bay, Worcestershire, and tabasco.  Mix well and form into 3 oz. patties.  Coat each patty with the remaining 1 cup of breadcrumbs and pan fry them in oil til golden brown or bake them in the oven. 

Dairy Free Remoulade: 
1 Cup Vegan Mayo 
1 TBL Ketchup 
1 TBL Dijon Mustard 
1 tsp Tabasco 
1 tsp Vegan Worcestershire
1 TBL Lemon Juice 
¼ Sea Salt
2 tsp Minced Shallots
2 tsp Capers Minced 
1 tsp Chopped Fresh Parsley 
2 tsp Minced Red Bell Pepper 
Method: Mix all ingredients in a food processor and blend on high for 1 minute.  Refrigerate 

Cauliflower Buffalo Wings w/ Dairy Free Ranch and Celery & Carrot Sticks
6 Cups Cauliflower Florets 
1 Cup Chickpea Flour or All Purpose Flour 
¼ tsp Garlic Powder
¼ tsp Salt
¼ tsp Paprika 
1 Cup Water
½ Cup Olive Oil 
1 Cup Frank's Hot Buffalo Wing Sauce 
24 Carrot Sticks 
24 Celery Sticks 
Method: Preheat oven to 450 degrees.  Combine flour, water, salt, garlic powder, paprika, and whisk to combine.  Dip cauliflower florets in batter and place on baking sheets lined with parchment paper or a well greased pan.  Baste the tops with a little bit of olive oil.  Bake for 18-20 minutes or until the tops get some color.  Pull the cauliflower out of the oven and lightly dip them in buffalo sauce to coat.  Put them back in the oven for 5 more minutes to crisp.   Serve on a platter with dairy free ranch .

Dairy Free Creamy Ranch Dressing 
1 Cup Just Mayo, Diary-Free/Egg Free Mayonnaise
½ Cup Tofutti, Non-Dairy Sour Cream 
1 tsp Vegan Worcestershire (like Annie's or Wizard's) 
1 tsp White Vinegar
1 tsp Fresh Dill Chopped 
1 TBL Fresh Chopped Chives 
¼ Cup Italian Parsley 
1/8 tsp Cayenne pepper
½ tsp Garlic Powder
½ tsp Black Pepper 
Method:  Combine all ingredients, which until smooth.  Refrigerate.
