ROANOKE – Chef Ted is back with a delicious Thanksgiving recipe for "Butternut Squash Soup"

Butternut Squash Silk (Soup)

2 each butternut squash 
1 onion, small dice 
2 oz. celery, small dice
2 C Vegetable stock
2 C Heavy Cream
1 oz. Oil
TT salt and pepper
1 sprig fresh thyme 

MOP: Sweat the onions and celery with a pinch of salt and oil. Add diced squash and cream. Simmer until tender. Strain and purée. Reserve cream. Add purée to a pot with vegetable stock and add remaining cream until the desired consistency is achieved. Season and garnish with: pumpkin seeds, candied pecans, safe, etc..
