Stocked Market Kitchen: Curried Deviled Eggs

ROANOKE – The Ladies of the Junior League are showing us some of their favorite recipes from their "Oh, my stars!" Cookbook.

Curried Deviled Eggs

6 large eggs, hard cooked
1 tbsp. minced green onions
1/4 cup mayonnaise
3/4 tsp. Curry powder
Salt, Pepper to taste

Garnish: 1 tbsp. minced fresh parsley, nicoise olives

Cut the eggs into halves lengthwise. Scoop the yolks into a medium bowl and mash with a fork. Add the green onions, mayonnaise and curry powder and mix well. Season with salt & pepper. Spoon or pipe the yolk mixture into the egg whites. Garnish with parsley and olives.

Serves six.
