Creme Brulee

  30 oz heavy cream (1qt)

7 oz sugar (divided into 2 3.5oz protions)

8 yolks

1 egg

1 vanilla bean

salt, to taste

1. heat cream, 3.5 oz sugar, and vanilla bean together

2. combine yolks, egg, and 3.5 oz sugar

3. temper cream into yolks and strain

4. bake at 325F (conventional oven) for 45 minutes in a water bath, roateing every 15 minutes.
