Fresh Lemon Salmon with Capers
2- 8 oz. fresh salmon filets

4 Tbsp. Milo's All Natural Lemonade
Juice from 1 fresh Lemon
Extra Virgin Olive Oil
½ tsp. minced garlic
½ tsp. Oregano
3 tsp. butter
3 Tbsp. capers in brine
Salt and pepper
Lightly cover the bottom of a frying pan with olive oil, add garlic and when hot, add salmon. Cook on medium for a couple of minutes, turn gently, add butter, sprinkle salmon with oregano, Milo's All Natural Lemonade, lemon juice, salt, pepper and capers. Cook a couple of minutes, and remove from pan- edges of salmon should be crispy-be sure not to overcook. Cook down the oil/lemon/caper sauce a little longer if needed. Serve salmon with sauce poured over and on top of Green Bean Almandine (recipe below.) This recipe is also delicious on the grill- just flash sear fish in pan, place on grill for a few minutes, then plate and add sauce.
Green Beans Almandine
2 cups whole, fresh, tender green beans with no strings and trimmed
Extra Virgin Olive Oil
½ tsp. minced garlic
2 tsp. butter
Seasoned salt
Slivered almonds browned lightly in butter and lightly salted
Lightly cover the bottom of larger skillet with olive oil, heat on medium high with garlic. Add green beans, butter, seasoned salt to taste. Cover with lid and cook for 3-4 minutes. Stir in browned almonds and remove from heat when beans are cooked to al dente' - don't overcook. Plate and top with Lemon Salmon with Capers.
