27 oz FOOD LION Pork Tenderloin
5 Teaspoons Applewood Rub
3 tablespoons FOOD LION olive oil
Directions
Rub Applewood seasoning over FOOD LION Pork Tenderloin. Wrap in plastic wrap and refrigerate 2-4 hours.
Cook in electric skillet for 90 minutes or 350 degree oven for 2 hours. Baste with olive oil periodically

SMASHED POTATOES AND PEAS
INGREDIENTS
1 cup FOOD LION whole milk
1 lb large red boiling potatoes (about 4), scrubbed well and cut into 1-inch pieces
2 garlic cloves, quartered
2 (4-inch ) sprigs fresh thyme
1 1/4 teaspoons salt
1/4 teaspoon black pepper
1 (10-oz) package FOOD LION frozen peas (not thawed)
2 tablespoons FOOD LION unsalted butter
PREPARATION
Briskly simmer milk, potatoes, garlic, thyme, salt, and pepper in a 2-quart saucepan over moderate heat, partially covered, 10 minutes (do not let boil).
Add peas and cook, partially covered, until potatoes are tender, about 5 minutes. Remove from heat, then add butter and let stand, covered, until melted, about 1 minute. Discard thyme.
Coarsely mash mixture with a potato masher or large fork.
Brown Gravy
1/2 cup butter or olive oil
1/2 cup flour
1 clove garlic, minced
1/4 cup FOOD LION ketchup
1 tsp FOOD LION Dijon mustard
1 tbsp FOOD LION Worcestershire
1 quart of pork loin drippings and broth (as high-quality as possible!)
salt and black pepper to taste
Prep Time: 5 minutes: 25 minutes
Total Time: 30 minutes
PREPARATIONIn a saucepan, melt the butter or olive oil over medium-low heat. Add the flour and cook, stirring, for 5 minutes, until the mixture is golden-brown and smells like cooked pie crust. Add the garlic and cook for 30 seconds. Whisk in a cup of the drippings and broth, and then add the rest of the ingredients, except the salt and pepper.
Bring to a simmer, whisking, and then reduce the heat to low and simmer for 20 minutes, stirring occasionally. Taste, and season with salt and pepper.
