Daytime Kitchen: Dragon's Tooth Sandwich from Wildflour

Wildflour on 4th is here with a tasty Eggplant Recipe

ROANOKE – Justin and Evie from Wildflour Restaurant on 4th Street are here with a tasty eggplant dish called "Dragon's Tooth Sandwich".  Try this out at home, and see what's new at the restaurant.

Ingredients
-1 eggplant sliced
-1 cup of parmesan cheese
-1 cup of all-purpose flour
-3/4 tablespoon basil
-3/4 tablespoon spike seasoning
-3 eggs beaten
-Sliced mushrooms
-Sliced red onions
-Sliced green peppers
Instructions
1. Mix the spike seasoning, all-purpose flour, parmesan cheese, and basil together thoroughly.
2. Coat the slices of eggplant in the beaten eggs, and then with the aforementioned mixture.
3. Lay coated slices onto wax or parchment paper, and bake on 350 degrees for 20 minutes or until golden brown.
4. While eggplant is baking, sautee onions, mushrooms and green peppers in olive oil with your choice of seasoning.
5. When eggplant finishes baking, stack 3-4 slices onto your choice of bread and top with the sauteed trio. Cover with cheese, tomato, lettuce, ranch and secret sauce.
