Gluten Free Oatmeal Cake

Ingredients:

1 ½ c. hot water

1 c. gluten free oats

1 c. FOOD LION brown sugar

1 c. FOOD LION white sugar

½ c. FOOD LION butter, at room temperature

2 FOOD LION eggs

170 grams gluten free flour mix (1 ¼ c.)

1 tsp. FOOD LION cinnamon

1 tsp. FOOD LION baking soda

½ tsp. salt

½ tsp. xanthan gum

Topping:

3/4 c. FOOD LION butter

1 c. FOOD LION brown sugar

1 Tbsp. FOOD LION milk

1 c. coconut

Gluten Free Flour Mix

1 c. brown rice flour

1 ¼ c. white rice flour

¼ c. potato starch flour

2/3 c. tapioca starch flour

¾ c. sweet rice flour

1/3 c. cornstarch

Instructions:

  • Preheat the oven to 350°F. Spray a 9x13-inch baking dish with nonstick cooking spray.
  • Combine the water and the oatmeal and allow to soak while you prepare the remaining ingredients.
  • Cream together the butter and both sugars. Beat in the eggs. In another bowl, mix together the flour, cinnamon, baking soda, salt, and xanthan gum. Add half of the flour to the creamed butter mixture, followed by the soaked oatmeal, then the remaining flour, mixing between additions. Pour into the prepared baking dish and bake until set, 35-40 minutes.
