Tasty Tuesday: Icy Cakes makes one-of-a-kind, single-serve ice cream cakes

ROANOKE, Va. – It’s not often that we get treated to an ice cream cake, but Icy Cakes in Roanoke is trying to change that.

When it comes to the cakes and the shell used to decorate them, “Temperature is everything with these.”

With summer-like warmth in the forecast this week, the temperature really is everything. In fact, it may even be the reason why you’re craving these Icy Cakes.

The husband-wife duo of Jack and Lindsey Moore started this about a year ago for many reasons.

Lindsey tells us, “We love ice cream cakes. But it’s kind of one of those things you can only get at a birthday party or a big gathering. Or you just have to buy a whole one for yourself or your family that sits in your freezer forever, so we were like…let’s just make a miniature version.”

Plus, it just makes sense in times like these.

“Times of COVID, it’s single-serve. There’s no big thing that everyone is sharing.”

The pair decided to work on their two best sellers - the Mint Chocolate Chip and the Peanut Butter Cup. This process starts out tedious, as they chop up candy pieces used to decorated these tiny cakes.

While the hard shell may be Lindsey’s favorite decoration, she says, “It’s a race against time, because these are melting right when they first come out. So, we gotta decorate quickly.”

Fast and smooth, the chocolate shell goes on the mint chocolate ice cream. The candy comes next, and voila! The process is then repeated with the Peanut Butter Cup, but with “A chocolate topping and a peanut butter topping, so the two different types of shell.”

It’s a mad dash to the freezer to keep these mini cakes from melting. That’s something you may want to consider when you visit Crystal Spring Grocery, where their six types of Icy Cakes are often sold

“We have an original with the half chocolate and half vanilla. And then we also have a salted caramel, cookie dough which is another really popular one and strawberry.”
